Stuffed Bruschetta Chicken



Ingredients: 
  • 1 can of diced tomatoes undrained
  • 1 package of stuffing for chicken
  • 1 and 1/4 cups of your favorite shredded cheese; mozzarella is great for this recipe
  • 2-6 chicken breast halves (based on how many you are cooking for)
  • 1/3 cup of red pepper italian with parmesan dressing
  1. Preheat the oven to 350 degrees Fahrenheit 
  2. Pour the package of stuffing into a bowl 
  3. Pour the diced tomatoes into the bowl with the stuffing 
  4. Add 1/2 cup of the shredded cheese to the stuffing and diced tomatoes; mix these three ingredients together
  5. Make a cut in the center of the pieces of chicken so that the chicken can be stuffed
  6. Stuff the pieces of chicken with the stuffing mixture 
  7. Spray a baking pan with non-stick spray and place the pieces of stuffed chicken into the pan
  8. Drizzle the pieces of chicken with the red pepper italian dressing 
  9. Bake for 40 minutes 
  10. Sprinkle the remaining 1/2 cup of cheese on top of the cooking chicken 
  11. Bake for 5 more minutes of until the cheese is melted
